As I prepare to walk the Trans-Catalina Trail, I’m whipping up some tried and true recipes including a delicious jerky with NO ADDED SUGAR or chemicals.

It’s super simple and requires very few ingredients. You can always add a drop of pineapple juice for sweetness and cut the soy if too salty.

Jerky will store for up to a week in an airtight container. I vacuum seal then freeze it and have sent it in resupply boxes. Never a problem!

Jerky Recipe 

ingredients

🥩2 lbs beef (with as little marbling as possible)

☕️ 1 cup soy sauce (I like Braggs Liquid Aminos)

🥄 1 tsp liquid smoke (optional, but adds a wonderful flavor!)

🥄🥄 2 tsp fresh ground pepper

🥄 1 tsp smoked garlic powder

🥄 1 tsp smoked paprika

🥄 1/2 tsp red pepper flakes

Set the dehydrator to 175° and don't over-dry!

directions

🥶 slightly freeze the meat to make easier to slice thinly

🥣 mix marinade and add meat, best if stored in a bag overnight in fridge so the jerky soaks up all the marinade

🥵 place in a dehydrator until dry (NOTE: about 1 – 1 1/2 hours only or it will be too tough!)

😋 cool and store in air-tight container
